From Brown to professional kitchens

Carla Lalli Music was born on 15 August 1972 in New York, into an Italian-American family with food in its blood – her mother worked as a food critic and cookbook editor. She studied Modern Culture and Media at Brown University before training at the French Culinary Institute, and then spent more than a decade in food service, including as a line chef and kitchen manager for Rocco DiSpirito, as the first general manager of Shake Shack, and as an instructor in culinary management.

Bon Appetit and beyond

Music became a food editor at large at Bon Appetit and a familiar face on the magazine’s YouTube channel, most notably as host of Back-to-Back Chef, in which she guided a guest through a recipe in real time. She left the magazine in 2020, and has since built an independent career through her books, videos and writing, continuing to reach a large audience of home cooks.
