A son of Gascony

Michel Sarran was born in 1961 in Nogaro, in the Gers, deep in Gascony – a region famous for its foie gras, duck and generous cooking. That South West heritage would remain at the heart of his cuisine throughout his career, giving it a distinctive warmth and sense of place.

His Toulouse restaurant

In June 1995 Sarran opened the restaurant bearing his name in a private mansion on boulevard Armand-Duportal in Toulouse. There he created a sun-kissed take on the cuisine of the South of France, whose spices, marinades and confits occasionally meet more far-flung influences. The restaurant held a Michelin star from 1991 and two stars from 2003 to 2022, one of the leading tables in the region.

Television fame

Sarran reached a national audience as a member of the jury on the M6 programme Top Chef, from season six (broadcast in 2015) to season twelve (broadcast in 2021), later coaching the yellow brigade. His warm, encouraging manner made him one of the most popular figures on French food television and brought his southern cooking to a wide public.

Signature style

Sarran’s style is generous and sunlit, rooted in the produce and traditions of Gascony and the wider South West. He builds on the region’s classic ingredients – foie gras, duck, vegetables, herbs – while allowing spices, marinades and outside influences to bring extra vibrancy. It is warm, flavourful cuisine with a strong sense of identity.
