From rugby to the kitchen

Born in 1966 to a Basque chef father, Philippe Etchebest grew up in the family restaurant in Bordeaux and played semi-professional rugby before devoting himself fully to cooking. A starred career

Etchebest built an impressive Michelin record: two stars at the Hostellerie de Plaisance in Saint-Emilion, a star at Le Quatrieme Mur, and, in 2025, two stars for Maison Nouvelle in the Chartrons district of Bordeaux, which he opened late in 2021.
