Christoph Ruffer is one of Germany’s finest chefs, holder of three Michelin stars at Restaurant Haerlin in Hamburg’s grand Hotel Vier Jahreszeiten. Over more than two decades he has built Haerlin into one of the country’s leading gourmet destinations, admired as an architect of aroma and flavour.

Trained in the great German three-star kitchens, Ruffer combines classical precision with a willingness to take creative risks, and reached the summit of three stars in 2025.

Learning the craft

Christoph Ruffer was born in 1973 in Essen and began his training in 1989 at the Sheraton there. He worked at Le Gourmet in Munich under Otto Koch, then in Baiersbronn as demi-chef de partie at Harald Wohlfahrt’s Schwarzwaldstube and chef de partie under Claus-Peter Lumpp at Bareiss – the heart of the German three-star tradition.

A first star on Sylt

In 1999, as head chef at Fahrhaus Munkmarsch on Sylt, Ruffer earned his first Michelin star. It confirmed his talent and set the stage for his move to one of Germany’s grandest hotels.

Three stars at Haerlin

Since June 2002 Ruffer has been head chef at Restaurant Haerlin in Hamburg’s Hotel Vier Jahreszeiten. He earned a star that same year, a second in 2012, and in 2025 the restaurant was elevated to three Michelin stars. He was named Gault Millau Chef of the Year in 2014.

Ruffer is described as an architect of aroma, combining classical French foundations with creative daring. His three-star cuisine is precise, elegant and richly flavoured, and has placed Haerlin among the very best restaurants in Germany.
